A heavy dark Belgian ale perfect for cold weather. My grandmother tells me this song was played on the guitar by my great grandfather so this one was named in tribute.

Fermentables
- 13 lbs - 2 row pale malt
- 12 oz - Special B
- 8 oz - Wheat malt
- 1 lb - Belgian Dark Candi Syrup 180 srm
Hops
- 2 oz - Hallertauer 3.6% AA - 60 minute
- 1.5 oz - Saaz 2.8% AA - 15 minute
- 1.5 oz - Select Spalt 2.2% AA - 15 minute
Yeast
- 1 packet of Imperial Triple Double (#B48)
Brew Steps
Standard 60 minute mash at 152, fly sparge at 168 and boil for 90 minutes.
Single stage fermentation at 68 for 14 days, rack to keg and cold condition for 14 days then carbonate at 12.5 PSI
